Yummy Microwave Omelet

Ingredients
- 2 Eggs
- 1 Tbs Milk
- 2 Tbs Thrive Sausage (rehydrated with boiling water for 5 minutes then drained)
- 2 Tbs Thrive Mushrooms
- 2 Tbs Thrive Red Peppers (I like to break up the big pieces)
- 1 Tbs Thrive Chopped Onions
- 1 tsp Thrive Green Chilis
- 1 tsp Thrive Green Onions
- To Taste Salt & Pepper
- 1/4 Cup Thrive Shredded Cheddar Cheese (rehydrated)
Directions
- Whisk together the 2 eggs and milk in a small bowl. Add the rehydrated sausage, and all the vegetables. Let them soak in the egg mixture for 5 minutes.
- Transfer the egg mixture to a microwave safe bowl with a loose-fitting lid. I have found a plastic dish with a lid from Tupperware that works perfect.
- Place in microwave and cook on high for 1 1/2-2 minutes. Check after 1 1/2 minutes to see if eggs are fully cooked through.
- Remove from microwave and add the shredded cheese. Place the lid back on to melt the cheese.
- Once cheese is melted, add cilantro for garnish and salt and pepper to taste.
