Ingredients

  • 2 c. Small White Navy Beans
  • 1/4 c. Thrive Chopped Onions
  • 1 tsp. Basil
  • 1 tsp. Oregano
  • 1 tsp. Thrive Chefs Choice
  • 2 tsp. Iodized Salt
  • 1 tbsp. Minced garlic
  • 1 tbsp. Olive Oil
  • 1/2 c. Heavy Cream
  • 1 tsp. Thrive Chefs Choice
  • 1 tbsp. Thrive Italian Seasoning Blend
  • 1/2 c. Thrive Shredded Parmesan Cheese
  • 1 tbsp. Cholula Hot Sauce (optional)

Directions

  1. Sort and rinse the beans, soak in 4x the amount of water- over night is best.
  2. Drain and rinse the beans again, add beans to a pot with the onions, basil, oregano, Chef's Choice, salt, and garlic.
  3. Add enough water to cover beans by 2 inches.
  4. Cook for 2 1/2 hours at medium simmer or until tender.
  5. Add more water as needed, but cook water down to about 1 cup before pureeing.
  6. Add beans to blender with about 1 cup of the remaining juice and blend.
  7. Add olive oil, cream, Italian seasoning, Chef's Choice Seasoning, balsamic vinegar, Parmesan cheese and hot sauce to blended beans.
  8. Puree until smooth.
  9. Taste and adjust flavor and consistency as needed.
  10. Top with olive oil and tomato basil salsa.
