White Bean Dip

Ingredients
- 2 c. Small White Navy Beans
- 1/4 c. Thrive Chopped Onions
- 1 tsp. Basil
- 1 tsp. Oregano
- 1 tsp. Thrive Chefs Choice
- 2 tsp. Iodized Salt
- 1 tbsp. Minced garlic
- 1 tbsp. Olive Oil
- 1/2 c. Heavy Cream
- 1 tsp. Thrive Chefs Choice
- 1 tbsp. Thrive Italian Seasoning Blend
- 1/2 c. Thrive Shredded Parmesan Cheese
- 1 tbsp. Cholula Hot Sauce (optional)
Directions
- Sort and rinse the beans, soak in 4x the amount of water- over night is best.
- Drain and rinse the beans again, add beans to a pot with the onions, basil, oregano, Chef's Choice, salt, and garlic.
- Add enough water to cover beans by 2 inches.
- Cook for 2 1/2 hours at medium simmer or until tender.
- Add more water as needed, but cook water down to about 1 cup before pureeing.
- Add beans to blender with about 1 cup of the remaining juice and blend.
- Add olive oil, cream, Italian seasoning, Chef's Choice Seasoning, balsamic vinegar, Parmesan cheese and hot sauce to blended beans.
- Puree until smooth.
- Taste and adjust flavor and consistency as needed.
- Top with olive oil and tomato basil salsa.
