Tropical Pulled Pork Sandwiches

This juicy tropical pulled pork sandwich filling really brings smiles to dinner time! Filling is great in a bun/wrap or on rice (I like to add a slice of sharp cheddar) with some coleslaw or a side salad and you have a lovely meal.

Ingredients
- 1 tbsp. Butter, salted or THIRVE butter
- 1/4 c. THRIVE Onion Slices (reconstitute these with water as you will need to brown them in butter)
- 1 tsp. Garlic
- 1/2 c. THRIVE Mixed Bell Peppers you can reconstitute this or add the water amount to the pan when the peppers are added)
- 1 c. THRIVE Pulled Pork(you can reconstitute this or add the 1/2 cup of water to the pan when the pork is added)
- 1/2 c. THRIVE Pineapple (reconstitute these with pineapple juice for an extra zing)
- 1 c. pineapple juice (optional)
- 1/4 c. Barbecue Sauce
- 1 tbsp. Lime Juice
Directions
- Refresh the onion slices and saute them with the garlic in butter until golden and fragrant
- Add the mixed bell peppers (and the appropriate amount of water if not reconstituted) to the pan and cook until softened and liquid has been absorbed
- Add the pulled pork (and the appropriate amount of water if not reconstituted) to the pan and cook until softened and liquid has been absorbed
- Add the pineapple pieces (and the appropriate amount of water or pineapple juice if not reconstituted) to the pan and cook until softened and the liquid has been absorbed
- Add the barbeque sauce (you can use more than the quarter cup if you like it saucier), and add any extra pineapple juice and the lime juice and cook until the liquid is mostly reduced.
