Sweet Cherry Coffee Cake

Ingredients
- 2 c. White Flour (All Purpose Unbleached Flour)
- 1 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1 tsp. I Iodized Salt
- 1/2 c. butter, softened or THRIVE Butter (prepared)
- 1 tbsp. Butter (to grease pan)
- 1 c. Cane Sugar
- 2 tbsp. Whole Egg Powder or Scrambled egg powder+ 1/4 cup water
- 1 tsp. Vanilla extract
- 1 c. THRIVE Sour Cream Powder (prepared)
- 1 c. THRIVE Sweet Cherries (rehydrated)
- Streusel
- 1/2 c. White Flour (All Purpose Unbleached Flour)
- 3 tbsp. Brown Sugar
- 1/2 tsp. Cinnamon
- 1/4 tsp. Iodized Salt
- 4 tbsp. Butter, softened or Thrive Butter (prepared)
Directions
- Preheat oven to 350F.
- Mix together flour, baking powder, soda, and salt. Set aside.
- Beat butter, sugar, eggs, and vanilla together until fluffy.
- Alternately add in flour mixture and sour cream. Layer cherries between equal halves of batter in a buttered bundt pan.
- Mix all streusel ingredients together and sprinkle streusel on top of cake.
- Bake for 45 minutes or until fork comes out clean. Cool cake on cooling rack.
