Strawberry Cheesecake

If you would like to make Cheesecake bars, multiply each ingredient of the recipe by 1.5 and bake in a standard cookie sheet.

Ingredients
- 1 1/2 c. water
- 1 tsp vanilla
- 3 c. Thrive strawberries
- 1/2 c. white sugar
- 1 1/2 tsp. cornstarch
- 1/4 c. white sugar
- 1 c. graham cracker crumbs
- 1/4 c. butter, melted
- 24 oz. cream cheese
- 3/4 c. white sugar
- 1 tsp. vanilla
- 3 tbsp. whole egg powder + 6 tbsp. cold water
Directions
- Mix water with 1 teaspoon. vanilla, strawberries, 1/2 cup sugar, and cornstarch.
- Heat over medium-high heat until thick and syrupy and let cool
- Combine 1/4 cup sugar, graham cracker crumbs and butter
- Press mixture into bottom of 9- inch springform pan.
- Bake crust at 350 degrees F, for 10 minutes
- Combine cream cheese, 3/4 cup sugar, and remaining vanilla in electric mixer and blend well.
- Add eggs slowly while mixing.
- Pour the batter into pan over on top of crust, then top with strawberry mixture.
- Bake cake at 300 degrees F, for 60 min: let cool for several hours before serving
