Spinach, Mushroom, & Mozzarella Quiche

These individual quiches are delicious, simple and always a huge hit! They're 100% Thrive, very healthy, and crust-free for a great gluten-free dish. I've literally had party guests fight over the last one!

Ingredients
- 6 Tbsp Thrive Scrambled Egg Mix
- 1/4 c THRIVE Mushroom Pieces
- 1/4 c THRIVE Chopped Spinach
- 1/4 c THRIVE Chopped Onions
- 3/4 c THRIVE Mozzarella Shredded cheese
- 1/2 c THRIVE Sour Cream Powder
- 3/4 c Water
- 3 Tbsp Water
- 1/2 tsp Basil
- 1/4 tsp Iodized Salt
- 1 dash pepper
Directions
- Preheat oven to 350F.
- Combine all ingredients in a bowl leaving out 1/2 c Mozzarella Cheese.
- Pour Mixture into greased muffin tins, 3/4 full.
- Bake for 20 minutes.
- Sprinkle remaining 1/2 c of Mozzarella Cheese on top.
- Bake for 5 more minutes
- Remove and let cool for 5 minutes.
