Quick & Easy Veggie Sausage Scramble

Add more nutrients to your day with this easy, one pan Scramble. Wrap it in a tortilla for a delicious on the go snack. Leave out the Sausage for a vegetarian dish. Add or delete ingredients to fit your taste.

Ingredients
- 1/4 C THRIVE Sausage Crumbles - Dry
- 1/3 C THRIVE Mushroom Pieces - Dry
- 1/3 C THRIVE Red Bell Peppers - Dry
- 1/3 C THRIVE Zucchini - Dry
- 1/3 C THRIVE Tomato Dices - Dry
- 1/2 Tbsp THRIVE Chopped Onions - Dry
- 1 1/2 Tbsp THRIVE Chopped Spinach - Dry
- 4 Eggs, fresh (Thrive Scrambled Egg Mix can be used)
- 2/3 C Water
- 1/4 C Cheddar Cheese
Directions
- Measure all dry ingredients into bowl
- Pre-heat small, non-stick frying pan on med-hi heat
- Add bowl of dry ingredients to pan. Lightly toast and toss ingredients in pan.
- When you can begin to smell the vegetables, add water
- Immediately, the water will start to boil and steam. Briefly stir vegetables and cover pan with lid.
- Cook 1-2 minutes with lid on pan. The ingredients will hydrate and the water will evaporate.
- When most of the water has evaporated, remove lid and add eggs. (Thrive Scrambled Eggs may be used.)
- Continue to stir eggs and ingredients over med-hi heat until eggs are cooked.
- Add Salt and Pepper to taste. Top with shredded cheese.
