Quick & Easy Lip-Smacking Chicken Pot Pie Filling

Made entirely from Thrive items (minus the pastry shell), this is a really great mixture for a cool winter's day to warm up your belly! This recipe (for 4 servings), will fill 4 of the small tart shells that you can either make from scratch, or purchase at the grocery store. Please note that anything other than the ingredients listed will change the nutritional information for the recipe. You can also swap out the chicken in favour of Turkey Dices that you need to use up as well!

Ingredients
- 1/8 C THRIVE Chopped Chicken
- 1 Tbsp THRIVE Green Peas
- 1/2 Tbsp THRIVE Carrot Dices
- 1 Tbsp THRIVE Green Onions
- 1/8 tsp Parsley
- 1/8 tsp Oregano
- 1/8 tsp THRIVE Chefs Choice
- 1/8 tsp Peppercorn
- 2 Tbsp THRIVE Sweet Corn
- 1/16 tsp THRIVE Chicken Bouillon
- 1 Tbsp Potato Beads
- 1 Tbsp THRIVE Broccoli (Use the powder at the bottom of the can!)
- 9/16 C Water (1/2 Cup plus 1 Tbsp)
Directions
- Combine all ingredients into a bowl. A soup bowl is the perfect size for 1 batch of 4 mini-pies.
- Allow to set for 2 minutes.
- Microwave the mixture for apx. 60 seconds at a time, until the potato beads create a thicker mixture.
- Once mixture sticks to a spoon while stirring, it is ready to spoon into pie crusts. If not, microwave further in rounds of 25 seconds.
- Spoon into mini tart/pie crusts, dividing the mixture across 4 tart shells (for 1 batch of 4 servings)
- If desired, sprinkle a good coating of your favourite cheese overtop of the mixture. This will create a yummy top shell!
- Place crusts onto baking pan/tray, and bake at 350' for roughly 15 minutes.
- Let cool slightly (The Potato Beads hold the heat really good!), and enjoy!
