Potato Gnocchi with Chicken Bolognese

Ingredients
- Gnocchi
- 1 c. THRIVE Mashed Potatoes
- 2 tbsp. THRIVE Scrambled Egg Mix
- 1 1/2 c. White Flour (All Purpose Unbleached Flour)
- 1/4 tsp. Iodized Salt
- 1 tbsp. THRIVE Italian Seasoning Blend
- 1 1/4 c. Water
- Sauce
- 1 tbsp. Garlic, minced
- 1 tbsp. Olive Oil
- 2 c. Water
- 1 tbsp. THRIVE Carrot Dices
- 1/3 c. THRIVE Onion Slices - Freeze Dried
- 2 tbsp. THRIVE Chopped Spinach - Freeze Dried
- 1/4 c. THRIVE Tomato Dices - Freeze Dried
- 1/2 c. THRIVE Chopped Chicken - Freeze Dried
- 1/3 c. THRIVE Tomato Sauce
- 1/2 c. THRIVE Shredded Parmesan Cheese - Freeze Dried , fold in at end
- 1/4 c. Kalamata Olives, halved
Directions
- Gnocchi:
- Add all dry ingredients together in a bowl and add in water. Mix until it is dough.
- Roll gnocchi dough into snake like ropes. It should be about 1/4 inch thick.
- Cut gnocchi into 1 inch pieces.
- Let dry for about 20 minutes.
- Boil Gnocchi for about a minute and thirty seconds after they float.
- Sauce:
- Saute garlic in olive oil until golden brown. Deglaze pan with water.
- Add in remaining ingredients, except tomato sauce, olives, and Parmesan cheese.
- Simmer for about 3 minutes, or until items are all reconstituted
- Add in sauce mix, olives, and Parmesan cheese. Mix until combined.
- Add in cooked gnocchi and enjoy. If sauce gets too thick, add in some of the leftover gnocchi water to thin out sauce.
