Oven Crispy Chicken - Gluten Free

Crispy Chicken Tenders without flour or binders, baked in the oven.

Ingredients
- 1 lb. Chicken Tenders
- 1 1/2 c. THRIVE Cauliflower
- 1/4 c. THRIVE Broccoli
- 1/4 c. Olive Oil
Directions
- Measure out the Cauliflower and Broccoli into a chopper. Pulse a few times to get your desired texture. (this becomes your flour or breading for the chicken.)
- Add the Chef's choice to the 'flour' and pour onto a plate.
- Dip the chicken tender into some water, shake off excess and dredge into the 'flour' mix.
- Place into a greased 9x13 pan.
- Drizzle the olive oil over the chicken tenders.
- Bake at 350 for 30 minutes or until brown and chicken is cooked.
- Note: cut into a piece of chicken, there won't be any visible pink left in the meat if it's cooked.
