Ingredients

  • 1 lb. Chicken Tenders
  • 1 1/2 c. THRIVE Cauliflower
  • 1/4 c. THRIVE Broccoli
  • 1/4 c. Olive Oil

Directions

  1. Measure out the Cauliflower and Broccoli into a chopper. Pulse a few times to get your desired texture. (this becomes your flour or breading for the chicken.)
  2. Add the Chef's choice to the 'flour' and pour onto a plate.
  3. Dip the chicken tender into some water, shake off excess and dredge into the 'flour' mix.
  4. Place into a greased 9x13 pan.
  5. Drizzle the olive oil over the chicken tenders.
  6. Bake at 350 for 30 minutes or until brown and chicken is cooked.
  7. Note: cut into a piece of chicken, there won't be any visible pink left in the meat if it's cooked.
