My THRIVE version of an old stand-by. My dad used to make us corned beef hash and I loved it. Here's my healthier and speedy version using THRIVE roast beef!

Ingredients
- 1 C THRIVE Potato Dices FD
- 1 C THRIVE Beef Dices FD
- 2 Tbsp THRIVE Chopped Onions FD
- 2 Tbsp Butter
Directions
- Reconstitute and Prep
- In first bowl, follow label directions to reconstitute roast beef first, since it takes the longest (15-20 min)
- After you've started reconstituting the roast beef, set a frying or saute pan to low heat and start melting the butter
- In a second bowl, reconstitute the potatoes, also according label (3-5 min)
- Then, add the chopped onions to the potatoes to reconstitute as well (1-3 min)
- There's no harm in leaving the potatoes and onion in the water while waiting for the roast beef to reconstitute if you need to
- A couple of minutes before the roast beef is ready, turn up the heat to medium-high. Each stove is a bit different, use your judgement :)
- Drain each of the bowls when ready, using a very small-holed strainer so that you don't lose and of the little bits (especially the onions!)
- Fry
- Add the ingredients from both bowls to the frying pan and stir together
- Add seasonings your family likes; I usually just add a bit of pepper
- Stir occasionally; allow it to brown to your liking
- Serve
- Serve with toast, or other favorite breakfast/brunch foods!
