Mushroom Barley Soup

Hearty, Heathy, Clean Soup for dinner or anytime.

Ingredients
- 1 Cup Quick 10 Min. Barley
- 3 Tbsp Butter
- 2 1/4 Cup FD Mushrooms
- 1/4 Cup FD Sliced Onions
- 2 Tbsp FD Spinach
- 3 Qts Chicken Stock
- 2 Tbsp Chefs Choice
- 1/2 teas. Pepper
Directions
- 1 Cup - Quick 10 Minute Barley follow direction on box
- 3 Tbsp butter in frying pan, start melting
- 2 1/4 Cups Mushroom sauté until soft
- 1/4 Cups Sliced Onions add to mushrooms
- 2 Tbsp Spinach add some of the stock till all is softened
- In a large pot pour in the stock and dump other ingredients to it.
- 2 Tbsp Chefs Choice
- 1/2 Teas. Pepper, mix everything together.
- Bring to a boil, then simmer for 25 minutes.
