Meatless Lentil Chili

Ingredients
- 5 c. Water
- 1 tsp. Iodized Salt
- 1 lb. Lentils
- 1 can (16 oz) THRIVE tomatoes or THRIVE tomato sauce (alternately, 2 c water + 1 c thrive tomato powder)
- 1 pkg. Dry onion soup mix
- 1 1/2 tsp. Chili powder
- 1/2 tsp. Cumin
- Cilantro (optional)
Directions
- In a large pan, bring water, salt, and lentils to a boil. Reduce heat, cover, and simmer for 30 minutes.
- Uncover the pan and add all remaining ingredients. Do not drain the water.
- Bring the mixture to a boil once more. Reduce heat and simmer for an additional 30 minutes.
- Serve with corn or tortilla chips and sour cream.
