Low-Carb Spinach Wrap

This bright green, tasty spinach wrap is ideal for a low-carb lifestyle. It can be mixed directly in a blender, then cooked on a griddle or the stovetop. It's both sturdy and flexible. And it's perfectly portable. A great way to get your greens!

Ingredients
- 1/4 cup Thrive Life scrambled egg mix
- 2 Tablespoons Thrive Life spinach
- pinch salt
- 1/4 teaspoon gelatin powder
- 7 Tablespoons water
Directions
- Add all ingredients to the carafe of a blender.
- Blend until smooth, about 30 seconds.
- Spray your cooking surface with non-stick cooking spray.
- Preheat your griddle or skillet to medium low.
- Pour the spinach/egg mixture in a large circle, starting at the center and swirling outwards.
- Smooth out the circle with an offset spatula until it's about 12-14 inches in diameter.
- Cook on medium low temperature until the underside is starting to turn a light brown, about 2-3 minutes.
- Flip over and cook another minute.
- Let cool completely, then fill, wrap, and enjoy!
