LASAGNA STUFFED PEPPERS

This recipe was for stuffed peppers, but Sam’s Club was out of the big ones so I bought the small peppers. I decided to slice some long ways and just layer them like “noodles.

Ingredients

  • 8 oz Cottage Cheese OR Ricotta
  • 1 can of Italian diced tomatoes
  • 8 oz bag Mozzarella Cheese
  • 4 oz of Colby Cheese
  • 1/4 cup Thrive Life Freeze dried Chopped Onions
  • 1 1/2 cup Thrive Life Freeze dried Gound Beef
  • 1/4 tsp Garlic Powder
  • 1 tsp Minced Garlic
  • 1 tbsp Thrive Life Italian Seasonings
  • 1 tsp Oregano
  • 2 tbsp Thrive Life Tomato Powder
  • 1 Bag Small Mixed Peppers from Sams club

Directions

  1. To make meat sauce:
  2. 1. In a large non-stick sauce pan over medium-high heat, add 1 1/2 cups of water, Freeze dried ground beef, freeze dried onion, and all the spices. Simmer for 10-15 minutes. Add salt if you want.
  3. 2. Add tomatoes. Mash the tomatoes into meat until they are crushed and broken up OR keep them whole.
  4. 3. Add the tomato powder and cottage cheese.
  5. 4. Reduce heat to low and simmer uncovered – 5 minutes.
  6. To make peppers:
  7. 1. Preheat oven to 350°
  8. 2. Spray the bottom of baking dish
  9. 3. Place the sliced peppers on bottom
  10. 4. Top with half the meat mixture and cheese
  11. 5. Repeat second layer
  12. 6. Bake for 30 minutes
