Honey Curry Cashew Chicken Salad

This yummy Chicken Salad comes ALIVE with a special Honey Curry Sauce! Serve it in a lettuce wrap, on a croissant, in a tortilla wrap, or stuffed pita. Once you try it, you may never go back to plan chicken salad again!

Ingredients
- 1 1/3 c. THRIVE Chopped Chicken
- 1/3 c. THRIVE Celery
- 1/3 c. THRIVE Chopped Onions
- 1 c. water
- 1/2 c. Mayonnaise
- 1 tbsp. Honey
- 1 tsp Curry Powder
- 1 c. Roasted Cashews
- 1 c. THRIVE Red Seedless Grapes, halved
Directions
- Combine the chicken, celery, onion, and water in a mixing bowl. Stir till combined. Let sit for 5-10 minutes, stirring occasionally.
- In a small bowl mix together the mayo, honey, and curry powder.
- Add the honey curry sauce, cashews and grapes to the chicken salad. Stir till combined.
- Refrigerate for 30 minutes to 1 hour before serving. Enjoy!
