Hearty Sausage Lentil Bowl

This versatile recipe is wonderful with the Northern Style Cornbread (also listed on the recipe site). Prefer to make a great vegan entree? Omit the sausage. Like yours to be more like a soup? Add another cup or two of water and adjust the amount of bouillon accordingly.

Ingredients

  • 1 C Lentils
  • 1 Tbsp Olive Oil
  • 1 Tbsp Garlic, Raw (minced)
  • 1 C THRIVE Sausage Crumbles - dry
  • 1/2 C Chopped Onions - dehydrated dry
  • 6 C Water
  • 1 C THRIVE Celery
  • 1/2 C THRIVE Carrot Dices
  • 4 tsp THRIVE Beef Bouillon
  • 1 tsp THRIVE Tomato Powder
  • 1 tsp Hot Sauce
  • 1/2 tsp THRIVE Chefs Choice
  • 1/2 tsp THRIVE Italian Seasoning Blend
  • 1/4 tsp Dried Thyme

Directions

  1. Under cool water, rinse lentils in a fine mesh strainer. Set aside.
  2. In a medium sized stock pot, heat oil at medium high heat. Add garlic and saute for a couple minutes, until garlic is very fragrant but not yet beginning to brown.
  3. Add the sausage (if using, see recipe description) and onions, and toast for 1-2 minutes.
  4. Add water and stir well to deglaze the bottom of the pot. Add lentils and all remaining ingredients and bring to a boil.
  5. Reduce heat and simmer for about 40 minutes, or until lentils have absorbed much of the liquid and ingredients are cooked to desired tenderness. Taste and season with salt and pepper, if desired.
