Hearty Beef and Vegetable Soup

A Thick Hearty Soup with Beef Dices and vegetables that is perfect for a cold winters night.

Ingredients
- 1 1/2 c. THRIVE Beef Slices FD - Reconstituted
- 1/4 tsp. Garlic Salt
- 1/8 tsp. Black Pepper
- 1/3 c. Butter
- 1/2 c. White Flour (All Purpose Unbleached Flour
- 1/3 c. THRIVE Carrot Dices
- 1/2 c. THRIVE Chopped Onions - FD
- 1/2 c. THRIVE Celery - FD
- 1/2 c. THRIVE Green Peas - FD
- 1/2 c. THRIVE Sweet Corn - FD
- 1/2 c. Frozen Baby Lima Beans
- 4 c. Water
- 1 tbsp. Basil
- 8 oz. can Diced Tomatoes
- 2 tsp. THRIVE Beef Bouillon
- 3 tsp. Worcestershire Sauce
Directions
- Put Beef dices in a bowl with the Garlic Salt and Pepper and add 3/4 cup water to hydrate.
- Add all FD vegetables to a bowl and add 2 cups water- Do not drain
- Melt butter in large sauce pan. Whisk 1/2 cups of flour into the melted butter until a thick, rough paste forms. Whisk constantly while it bubbles over medium heat.
- As it cooks, the roux will become smooth and begin to thin.
- Once the flour looses its raw smell, after about 5 minutes of cooking and stirring add water all at once.
- Add all the rest of the ingredients. Do not drain tomatoes, vegetables or beef. Cook and stir until thickened. Turn down heat and simmer about 5 minutes. Add more water if needed for desired thickness.
