Grilled Southwestern Sweet Potatoes with Vegetables

Ingredients
- 1/2 C THRIVE Sweet Corn - Freeze Dried
- 2 Tbsp THRIVE Green Chili Peppers - Freeze Dried
- 1/2 C THRIVE Green Bell Peppers - Freeze Dried
- 1/2 C THRIVE Red Bell Peppers - Freeze Dried
- 2 Tbsp THRIVE Green Onions - Freeze Dried
- 1 Tbsp Cilantro
- 3/4 C Water
- 1 can Black Beans
- 2 Tbsp Olive Oil
- Seasonings
- 1/2 tsp Cumin
- 1 1/2 tsp THRIVE Summer Limeade (Seasonal)
- 1/2 tsp Iodized Salt
- 1/2 tsp Peppercorn
- 1/4 tsp Chili Powder
Directions
- Slice and divide one large sweet potato.
- Add all THRIVE vegetables plus THRIVE cilantro to a bowl with 3/4 cup water and set for 5-7 minutes. Add Black Beans.
- Combine with the sweet potatoes on a grill pan.
- Combine Seasonings.
- Top potato, vegetable, & bean mixture with olive oil and seasonings and gently stir.
- Grill on Medium-High for 20-25 minutes or until sweet potatoes are tender.
