Grilled Southwestern Sweet Potatoes with Vegetables

Ingredients

  • 1/2 C THRIVE Sweet Corn - Freeze Dried
  • 2 Tbsp THRIVE Green Chili Peppers - Freeze Dried
  • 1/2 C THRIVE Green Bell Peppers - Freeze Dried
  • 1/2 C THRIVE Red Bell Peppers - Freeze Dried
  • 2 Tbsp THRIVE Green Onions - Freeze Dried
  • 1 Tbsp Cilantro
  • 3/4 C Water
  • 1 can Black Beans
  • 2 Tbsp Olive Oil
  • Seasonings
  • 1/2 tsp Cumin
  • 1 1/2 tsp THRIVE Summer Limeade (Seasonal)
  • 1/2 tsp Iodized Salt
  • 1/2 tsp Peppercorn
  • 1/4 tsp Chili Powder

Directions

  1. Slice and divide one large sweet potato.
  2. Add all THRIVE vegetables plus THRIVE cilantro to a bowl with 3/4 cup water and set for 5-7 minutes. Add Black Beans.
  3. Combine with the sweet potatoes on a grill pan.
  4. Combine Seasonings.
  5. Top potato, vegetable, & bean mixture with olive oil and seasonings and gently stir.
  6. Grill on Medium-High for 20-25 minutes or until sweet potatoes are tender.
