Grilled Cheese French Toast

Ingredients
- 2 Tablespoons flour (I use unbleached)
- 1/2 cup milk
- 2 large eggs OR 1/4 cup freeze dried egg mix + 1/3 cup water
- pinch salt
- 6 nice thick slices homemade sourdough bread or something equally as wonderful
- 2 cups shredded cheddar cheese OR equal amount cheddar sliced thickly
- 1 Tablespoons vegetable oil for frying
Directions
- Slowly whisk milk into the flour, then whisk in eggs and salt.
- Heat oil in skillet over medium-hot flame.
- Dip bread into batter to completely coat. Transfer to medium hot skillet.
- Repeat with all bread slices. If your skillet isn't big enough for 6 slices of bread, cook in stages.
- When the first side is grilled sufficiently, flip over to cook second side. Spread cheese over top 3 piece of bread (the underside of each sandwich). Reduce heat.
- Don't worry if some cheese spills over onto griddle. It's part of the charm. Put covering bread pieces over top of cheese and reduce heat to melt cheese.
- Serve warm on plate. May serve with a bowl of soup, side of salad or by itself.
- *optional dessert variation:
- To the batter, add 1/2 teaspoon vanilla + 1/4 teaspoon cinnamon + 2 teaspoons sugar
- Dip bread into sweetened mix and fry in oil the same way.
- Top with homemade raspberry sauce and dollup of cream, or scoop vanilla ice cream if desired.
