Greek Tacos

Ingredients
- 1 c. THRIVE Seasoned Chicken Slices
- 1/2 tsp. THRIVE Chefs Choice
- 1 tsp. Oregano
- 2 tbsp. Olive Oil
- 1/2 tsp. Classic Lemonade (Seasonal)
- 1 c. Water
- 2 flat bread - Greek pocketless pita, or homemade. Your choice - just something flat and wonderful
- 2 c. shredded lettuce
- 2 c. THRIVE Shredded Monterey Jack Cheese - Freeze Dried prepared
- 1 tbsp. Tzatziki Sauce 1 1 Slice 1 1
- 1 c. THRIVE Cucumbers
- 1/4 tsp. Iodized Salt
- 1 c. Plain, Nonfat Greek Yogurt
- 1 tbsp. Dill Weed
- 1 clv. Garlic, Raw (minced) - or 1 Tablespoon of minced garlic
- 1/4 tsp. Peppercorn
Directions
- In a medium sized bowl, put chicken, seasonings and lemonade powder. Pour water over top and olive oil.
- Fluff gently to ensure everything gets evenly dispersed and moistened.
- Using a flat pasta-type bowl helps moisten everything evenly Set aside to plump up - 10-20 minutes.
- Tzatziki Sauce
- hint: if you're using field cucumbers, better to peel them. If you're using Persian or English Cucumbers, not necessary to peel.
- In a fine strainer, toss shredded cucumber with salt. Allow the cucumber to drain at least 15 minutes over a bowl or sink to remove excess water. Press with fork to get as much out as you can after 15 minutes.
- In a medium sized bowl, combine the drained cucumber with other ingredients. Stir to combine well and set aside. Leaving a little longer only adds to the flavour. Making some up ahead of time is great.
- When chicken is rehydrated and deliciously lemony, and tzatziki is garlicky and lemony - warm up flat breads on hot skillet quickly to soften. Remove, place on plates.
- Add chicken mixture to the hot skillet and heat thoroughly. Add a little tzatziki if desired - very nice.
- Spoon hot chicken mixture on top of flat bread. Top with shredded lettuce and smother with more tzatziki.
- SERVE.
- Flat Bread
- Use your favourite bread recipe or use the THRIVE Honey Whole Wheat Dough Mix. Prepare dough according to directions on can (and in the quantity you want), let it rise as usual.
- At the point you normally would form dough into rolls or loaves, form into balls and roll out with rolling pin to quite thin (less than 1/4") circles.
- Heat skillet to quite high - no oil! When surface is hot enough for pancakes lay your flat bread on it. Let cook till bubbles form inside the dough and it begins to rise. Don't leave too long.
- I usually continue to roll new flat bread circles as I am cooking. When the dough is cooked on one side, flip over to finish cooking on the other side. Takes less time than you might think. A couple of minutes only.
- Remove, and set aside while you continue to cook the rest of your dough. Serve immediately.
- Nice soft, warm pitas - with chicken strips, lettuce and tzatziki drizzled over top. Ummm hmmm, that's what I'm talking about. :-)
- Use the left over flat breads to serve with hummous and tzatziki another time. The HONEY WHOLE WHEAT DOUGH MIX makes a delicious, honey sweet whole wheat bread that is hard to beat. Once you've tried it, it will be your new Fave!
- Greek Salad to serve on the side
- While chicken is plumping up, and Tzatziki is mellowing out, I usually make up a small Greek Salad: Coursely chopped tomato, cucumber and pepper if I have it. A little fresh basil, oregano, olive oil, red wine vinegar and crumbled feta on top. And of course some kalamata olives if you have some. (I am never without kalamata olives or feta)
