Ingredients

  • 1/4 c Thrive Shredded Cheddar Cheese-reconstituted with 1 tbsp water
  • 2 c. Milk
  • 1/2 c. Whipping Cream or Heavy Cream
  • 1/4 c. Mixed Bell Peppers
  • 2 tbsp. Thrive Green Chili Peppers
  • 1 tbsp. Thrive Chopped Onions
  • 1/4 tsp. Chili Powder
  • 1/4 tsp. Cumin
  • 1 tsp. Iodized Salt
  • 1 tbsp. Tabasco Sauce (or other hot sauce of choice)
  • 1/2 c. Cheese Blend
  • 2 tbsp. Butter (melted)
  • 2 tbsp. Rice Flour

Directions

  1. Reconstitute THRIVE shredded cheddar cheese in 1 tablespoon of water and set aside.
  2. In a sauce pan combine milk, cream, mixed bell peppers, green chili peppers, chopped onions, chili powder, cumin, and salt.
  3. Bring to a simmer. Allow to simmer 1-2 minutes, stirring constantly.
  4. Whisk in the tabasco, shredded cheddar cheese, and cheese blend.
  5. Combine in a separate bowl the melted butter and rice flour until blended.
  6. Add the flour and butter mixture to the sauce and whisk until smooth.
  7. Simmer for an additional 2-3 minutes or until sauce thickens. Serve.
  8. Additional Tip
  9. In place of both cheeses in this recipe, you can add shredded white American cheese or pepper jack cheese. You will need about 2 cups of shredded cheese.
  10. Garnish with fresh chopped tomatoes if desired.
