Gluten Free Queso Dip

This is a spin off Chef Todd's Queso Dip. Queso Dip is amazing for nacho night or a fantastic appetizer to serve at your next gathering! Make up a bowl of it and watch it disappear!!

Ingredients
- 1/4 c Thrive Shredded Cheddar Cheese-reconstituted with 1 tbsp water
- 2 c. Milk
- 1/2 c. Whipping Cream or Heavy Cream
- 1/4 c. Mixed Bell Peppers
- 2 tbsp. Thrive Green Chili Peppers
- 1 tbsp. Thrive Chopped Onions
- 1/4 tsp. Chili Powder
- 1/4 tsp. Cumin
- 1 tsp. Iodized Salt
- 1 tbsp. Tabasco Sauce (or other hot sauce of choice)
- 1/2 c. Cheese Blend
- 2 tbsp. Butter (melted)
- 2 tbsp. Rice Flour
Directions
- Reconstitute THRIVE shredded cheddar cheese in 1 tablespoon of water and set aside.
- In a sauce pan combine milk, cream, mixed bell peppers, green chili peppers, chopped onions, chili powder, cumin, and salt.
- Bring to a simmer. Allow to simmer 1-2 minutes, stirring constantly.
- Whisk in the tabasco, shredded cheddar cheese, and cheese blend.
- Combine in a separate bowl the melted butter and rice flour until blended.
- Add the flour and butter mixture to the sauce and whisk until smooth.
- Simmer for an additional 2-3 minutes or until sauce thickens. Serve.
- Additional Tip
- In place of both cheeses in this recipe, you can add shredded white American cheese or pepper jack cheese. You will need about 2 cups of shredded cheese.
- Garnish with fresh chopped tomatoes if desired.
