Gluten Free Crepes with Apple Pear Filling

Ingredients
- 1/4 c. THRIVE Scrambled Egg Mix
- 1 1/2 tbsp. THRIVE Instant Milk
- 2/3 c. THRIVE Gluten Free Flour
- 1/4 tsp. Iodized Salt
- 1 tbsp. Pure Vanilla
- 2 tbsp. Cane Sugar
- 2 tbsp. Butter, melted
- 1 c. Water
- Filling
- 2 c. THRIVE Fuji Apple Slices FD
- 1 c. THRIVE Pears FD
- 1/4 c. Butter
- 1 tsp. Cinnamon
- 1/2 c. Brown Sugar
- 1 tbsp. Pure Vanilla
- 1 c. Water
- 1/4 c. Mascarpone Cheese
Directions
- Crepes: Mix all dry ingredients together. Add in wet and mix until smooth.
- Allow to rest 10 minutes.
- Cook in Teflon pan with some butter or oil.
- Filling: Refresh apples and pears together with 1 cup of water. Set aside.
- Melt butter in a pan and add in refreshed fruit. Sauté for a minute or two.
- Add in remaining ingredients, except for the marscapone cheese, and bring to a simmer. Cook for about 2 minutes, or until thickened. Cool slightly and mix in marscapone cheese.
- To assemble, evenly spoon the filling on each crepe. Fold up and sprinkle with powdered sugar. Enjoy!
