Ingredients

  • 1/4 c. THRIVE Scrambled Egg Mix
  • 1 1/2 tbsp. THRIVE Instant Milk
  • 2/3 c. THRIVE Gluten Free Flour
  • 1/4 tsp. Iodized Salt
  • 1 tbsp. Pure Vanilla
  • 2 tbsp. Cane Sugar
  • 2 tbsp. Butter, melted
  • 1 c. Water
  • Filling
  • 2 c. THRIVE Fuji Apple Slices FD
  • 1 c. THRIVE Pears FD
  • 1/4 c. Butter
  • 1 tsp. Cinnamon
  • 1/2 c. Brown Sugar
  • 1 tbsp. Pure Vanilla
  • 1 c. Water
  • 1/4 c. Mascarpone Cheese

Directions

  1. Crepes: Mix all dry ingredients together. Add in wet and mix until smooth.
  2. Allow to rest 10 minutes.
  3. Cook in Teflon pan with some butter or oil.
  4. Filling: Refresh apples and pears together with 1 cup of water. Set aside.
  5. Melt butter in a pan and add in refreshed fruit. Sauté for a minute or two.
  6. Add in remaining ingredients, except for the marscapone cheese, and bring to a simmer. Cook for about 2 minutes, or until thickened. Cool slightly and mix in marscapone cheese.
  7. To assemble, evenly spoon the filling on each crepe. Fold up and sprinkle with powdered sugar. Enjoy!
