"Gimme Thrive" Tortellini Salad

Ingredients
- 9 oz. pkg fresh cheese tortellini
- 1 1/4 c. THRIVE Tomato Dices - Freeze Dried
- 1 c. THRIVE Sweet Corn - Freeze Dried
- 1 tbsp Basil
- 1 c. water
- Dressing
- 1/4 c. Olive Oil
- 1 tbsp. Red Wine Vinegar
- 1/4 tsp. THRIVE Classic Lemonade (Seasonal)
- 1 tsp. Dijon mustard
- 3 Tbsp. THRIVE Shredded Parmesan Cheese - Freeze Dried
- 1/2 tbsp Basil
- 1/4 tsp. Garlic Powder
- 2 tsp. Iodized Salt
- 1/2 tsp. ground black pepper
Directions
- Prepare tortellini according to package directions. Drain and allow to cool.
- While tortellini is cooking, reconstitute the corn, tomato dices, and 1 T. basil in a mixing bowl with the 1 cup of water. Toss several times while waiting for pasta.
- Combine dressing ingredients, mixing well. Pour over salad ingredients and allow to sit for 15 minutes before serving, or cover and refrigerate until ready to serve.
