"Gimme Thrive" Neapolitan Cheesecake Bars

Ingredients

  • 4 1/3 c. THRIVE Fudge Brownie Mix
  • 2/3 c. Hot Water
  • 16 oz. Cream Cheese, softened
  • 2 Eggs
  • 1/2 c. Cane Sugar
  • 1/2 c. Butter, softened
  • 6 c. Powdered Sugar
  • 1/4 c. Milk or THRIVE Milk
  • 1 c. THRIVE Strawberry Slices

Directions

  1. Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick cooking spray.
  2. Combine brownie mix and hot water and stir well to combine. Pour into pan and spread evenly.
  3. Bake for 15 minutes. Cool for 30 minutes.
  4. While brownies are cooling, combine cream cheese, egg, and cane sugar in a mixer and beat until well combined.
  5. Pour cream cheese mixture over brownies and return to oven.
  6. Bake for 35 minutes. Cool completely.
  7. In a mixer cream the butter until light and fluffy. Add powdered sugar and milk and mix well.
  8. In a regular blender or cup blender, process the strawberry slices into a powder. Pour into mixing bowl with powdered sugar mixture and mix well.
  9. Spread this mixture over gently over the brownies and refrigerate for 2 hours.
  10. Slice and serve. (Brownie layer will be very chewy, so make sure to cut all the way down thoroughly.)
