"Gimme Thrive" Neapolitan Cheesecake Bars

Cheesecake meets the flavors of Neapolitan ice cream!

Ingredients
- 4 1/3 c. THRIVE Fudge Brownie Mix
- 2/3 c. Hot Water
- 16 oz. Cream Cheese, softened
- 2 Eggs
- 1/2 c. Cane Sugar
- 1/2 c. Butter, softened
- 6 c. Powdered Sugar
- 1/4 c. Milk or THRIVE Milk
- 1 c. THRIVE Strawberry Slices
Directions
- Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick cooking spray.
- Combine brownie mix and hot water and stir well to combine. Pour into pan and spread evenly.
- Bake for 15 minutes. Cool for 30 minutes.
- While brownies are cooling, combine cream cheese, egg, and cane sugar in a mixer and beat until well combined.
- Pour cream cheese mixture over brownies and return to oven.
- Bake for 35 minutes. Cool completely.
- In a mixer cream the butter until light and fluffy. Add powdered sugar and milk and mix well.
- In a regular blender or cup blender, process the strawberry slices into a powder. Pour into mixing bowl with powdered sugar mixture and mix well.
- Spread this mixture over gently over the brownies and refrigerate for 2 hours.
- Slice and serve. (Brownie layer will be very chewy, so make sure to cut all the way down thoroughly.)
