A fun use for leftover mashed potatoes! You don't have to use Velveeta--just try to use a cheese that melts quickly. Cheddar is tasty, but won't end up very melted. by Julie Finlayson

Ingredients

  • 2 c. THRIVE Mashed Potatoes already prepared and seasoned
  • 2 tbsp. THRIVE Green Onions
  • 1 tbsp. Chives
  • Velveeta cheese cut into 1/2
  • 1/3 c. White Flour (All Purpose Unbleached Flour) White Flour (All Purpose Unbleached Flour)
  • 2 Eggs
  • 1 c. Panko or bread crumbs

Directions

  1. Add the green onions and chives to the mashed potatoes, adding a little water to refresh them as you go.
  2. Scoop out about a golf-ball size amount of potato mix and insert a cheese cube in the middle, carefully forming a seamless ball around it. Repeat with remaining potato mix. Freeze mashed potato balls for 1 hour.
  3. Roll each ball in flour, then coat in egg, then cover well with panko/bread crumbs.
  4. Carefully drop ball into hot oil and cook for 3-4 minutes. Remove and drain on paper towels. Repeat until all balls are fried.
