"Gimme Thrive" Low Carb Broccoli Cheddar Soup

Ingredients
- 4 tbsp. Butter, salted or THRIVE Butter
- 1 tsp. minced Garlic or THRIVE Garlic
- 1 c. THRIVE Onion Slices - FD
- 5 c. Water
- 4 tsp. THRIVE Chicken Bouillon
- 2 c. THRIVE Broccoli - FD broken into small pieces
- 1 tsp. Peppercorn
- 1 tsp. Salt, Table
- 2 tbsp. Cream Cheese
- 1/2 c. Heavy Whipping Cream
- 2 c. shredded sharp Cheddar cheese or THRIVE Cheddar Cheese
- 1 tsp. xanthan gum (optional)
Directions
- Add the butter and garlic to a soup pot and saute the garlic for about 30 seconds. Add onion slices and saute for another 30 seconds.
- Add water, bouillon, and broccoli. Simmer for about 5 minutes, or until broccoli is fully refreshed.
- Soften the cream cheese in the microwave until it's very soft and stir-able. Add this to the soup, along with the cream and seasonings. Bring to a boil, then remove from heat.
- Dump in the cheddar cheese and stir while the cheese melts.
- If you would like a thicker soup, sprinkle the xanthan gum over the top and stir or whisk in well. Allow to sit for a few minutes, then serve.
