"Gimme Thrive" Hot Corn Dip

Ingredients

  • 2 c. THRIVE Sweet Corn
  • 1/2 c. THRIVE Chopped Onions
  • 1/2 c. THRIVE Red Bell Peppers
  • 1/2 c. THRIVE Green Bell Peppers
  • 2 tbsp. THRIVE Green Chili Peppers
  • 2 c. water
  • 1 tsp. salt
  • 1/2 tsp. Peppercorn
  • 1/2 c. Mayonnaise (or more if needed)
  • 1 c. shredded Monterey Jack cheese
  • 1 c. shredded cheddar cheese

Directions

  1. Preheat oven to 375 degrees.
  2. In a medium skillet over medium high heat, stir together the corn, onions, bell peppers, and chili peppers for about 30 seconds. Then add in the 2 cups of water and allow the veggies to refresh. Add more water if necessary. If you have excess water and the veggies are refreshed, simply continue to simmer until the water is gone.
  3. Remove from heat and add in salt, peppercorn, mayonnaise, and cheeses, stirring well to combine.
  4. If skillet is oven proof, place in oven and bake for 15 minutes. (If it's not oven proof, remove dip to an 8 or 9" square greased baking dish and bake).
  5. Serve hot with tortilla chips.
