"Gimme Thrive" Gnocchi Soup

A hearty, thick chowder-like soup that is sure to please--substitute cooked pasta for the gnocchi if you prefer.

Ingredients

  • 1 c. THRIVE Onion Slices - FD
  • 1/2 c. THRIVE Celery - FD
  • 1 c. water
  • 1 tbsp. Butter or THRIVE Butter
  • 2 tsp. THRIVE garlic (or 2 garlic cloves, minced)
  • 1/4 c. White Flour (All Purpose Unbleached Flour)
  • 1 q. half and half
  • 1 tbsp. THRIVE Chicken Bouillon
  • 3 c. water
  • 1 c. THRIVE Chopped Chicken - FD
  • 1/2 tsp. Parsley
  • 1 tsp. Dried Thyme
  • 1/4 tsp. Ground Nutmeg
  • 1 1/2 tsp. Iodized Salt
  • 1/2 c. THRIVE Carrot Dices
  • 1 c. THRIVE Chopped Spinach - FD
  • 1 pkg. gnocchi, boiled and drained (17.6 ounce package)

Directions

  1. In a Dutch oven-sized pot, combine the onion and celery and heat over medium-high heat for a couple of minutes, stirring often. Pour in the 1 cup of water and stir well.
  2. Add the butter, garlic, and flour. Stir well to incorporate. Pour in the half and half and stir well. Bring to a boil, stirring constantly. Reduce heat and simmer for a few minutes until thickened a bit.
  3. Add the bouillon, 3 cups water, chicken, seasonings, and carrots. Simmer for 10 minutes.
  4. Add the spinach and cooked gnocchi and simmer until warmed through.
