"Gimme Thrive" Blueberry Truffles

Rich yet full of fresh blueberry flavor, these truffles will quickly become a favorite. Try it with strawberry, blackberry, or any of our fruits! These are best made the night before; the flavor and texture improve in the fridge.

Ingredients
- 1 1/2 c. THRIVE Blueberries FD
- 3 tbsp. Heavy Cream
- 5 tbsp. Butter, softened
- 9 oz. White Whocolate, chopped fine (do not use chips)
- 1/2 c. Powdered Sugar
Directions
- In a blender of food processor, pulse the blueberries until powdered.
- In a small saucepan, heat the cream over low to med-low heat until warmed through, but do not boil. Remove from heat.
- Add butter to cream and stir until completely melted.
- Add blueberry powder, stir well, and set aside.
- In a double boiler, melt the white chocolate slowly, stirring until smooth and totally melted. Remove from heat.
- Add the blueberry mixture into the chocolate mixture, stirring well to incorporate. (The butter will separate.)
- Place the mixture in the freezer for about 10 minutes, stirring halfway through to incorporate the butter. Stir well when you take it out of the freezer and place it, covered, in the fridge.
- Refrigerate for at least several hours. Overnight is best as the flavor and texture will both improve.
