Ingredients

  • 1 c. THRIVE Red Bell Peppers - Freeze Dried
  • 1 c. THRIVE Mushroom Pieces - Freeze Dried
  • 1 c. THRIVE Green Beans - Freeze Dried
  • 1 c. THRIVE Zucchini - Freeze Dried
  • 1 c. THRIVE Green Peas - Freeze Dried
  • 1 c. THRIVE Tomato Dices - Freeze Dried
  • 1 c. THRIVE Green Bell Peppers - Freeze Dried
  • 2 c. THRIVE Tomato Vinaigrette (see recipe)
  • 18 oz. green salad
  • 2 c. THRIVE Shredded Mozzarella Cheese - Freeze Dried (reconstituted)

Directions

  1. In a medium-size bowl, combine all THRIVE vegetables, cover with cold water, and allow to reconstitute for 10 minutes.Drain any excess water.
  2. Toss vegetables with 1 cup of the THRIVE Tomato Vinaigrette, reserving the rest to serve on the side.
  3. Place green salad in large salad bowl, top with marinated vegetables, and sprinkle mozzarella cheese over the top.
