Easy Apple Crisp

Ingredients
- 3 cups Thrive Life Granny Smith apples
- 2 cups warm water to refresh
- 3/4 cup quick oats (regular or gluten free)
- 1/2 cup flour (regular or gluten free)
- 1 teaspoon apple pie spice or cinnamon
- 2/3 cup sugar (I used coconut sugar), divided
- 4 tablespoons cold butter or THRIVE butter
- 1/2 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1 tablespoon cold water
Directions
- Preheat the oven to 375. Place the apples in a medium bowl and add water. Press the apples to make sure they are all covered and let sit 10 minutes until mostly rehydrated. Set aside.
- In a medium bowl add the oats, flour, apple pie spice and half the sugar. Stir to combine.
- Cut the butter in to 1/2" cubes and add to the oat mixture. Use your fingers to break up the butter into pea size pieces. Set aside.
- In your bowl with the apples, measure any remaining water to make 3/4 cup. If it's less, add enough water to make 3/4 cup.
- Mix the cornstarch and water and add to the apples. Add the cinnamon and the remaining half of the coconut sugar. Stir well then place in the bottom of an 8x8 baking dish.
- Top with the oat mixture and bake until golden and bubbly; about 20 minutes on the center rack.
