Easy and Delicious Potato Salad

Ingredients
- 4 c. THRIVE Potato Chunks
- 1 c. Salad Dressing or Mayonnaise
- 1 tsp. Onion Salt
- 1/2 c. Chopped Dill Pickles
- 5 Eggs, hard-boiled
- 1/4 c. Dill Pickle Juice
Directions
- Rehydrate the potato chunks according to directions. Drain and let cool.
- Peel and dice hard boiled eggs.
- In a large bowl, stir together the potato chunks, chopped eggs, and chopped dill pickles.
- In a small bowl, mix the salad dressing, dill pickle juice, and onion salt.
- Add the salad dressing mixture to the potato mixture. Stir to coat the potato mixture.
- Add salt to taste and sprinkle paprika on top for garnish.
- Refrigerate until ready to serve.
