Quick and easy dinner made almost completely from Thrive Life ingredients. Substitute shrimp, pulled pork, sausage crumbles, etc., for the chicken and use any veggies you like!

Ingredients

  • 3 Tablespoons avocado oil
  • 1 teaspoon sesame oil
  • 2 teaspoons Thrive Life Garlic
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon ground ginger
  • 2 Tablespoons soy sauce
  • 1-1/2 cups Thrive Life Diced Chicken
  • 1/2 cup Thrive Life Green Beans
  • 1/2 cup Thrive Life Sweet Corn
  • 1/4 cup Thrive Life Carrot Dices
  • 2-3 cups leftover rice (or Thrive Life White Rice prepared)
  • 2 eggs, beaten

Directions

  1. Cover Thrive Life chicken and veggies with hot water (use separate bowls for protein and veggies). Let sit for a 3-5 minutes.
  2. If using Thrive Life White Rice, prepare according to directions
  3. Add 2 Tablespoons of oil to pan or wok over med-high heat
  4. Drain chicken and veggies well
  5. Add red pepper flakes, garlic, ginger, and sesame oil to pan
  6. Add drained Thrive Life veggies to pan and stir for about a minute
  7. Add rice, soy sauce, and chicken (or other protein of choice) and stir, continuing to cook over med-high heat another minute
  8. Push rice to side, making a well in the center of the pan, add 1 Tablespoon of oil
  9. Pour beaten eggs into the well and cook/stir in center until scrambled
  10. Mix scrambled eggs into the rest of the rice/chicken/veggies
  11. Add additional soy sauce if needed, salt/pepper to taste, and serve
