Ingredients

  • 3/4 c. THRIVE Scrambled Egg Mix
  • 1 c. water
  • 2 tbsp. water
  • 3/4 c. Ham Dices - Freeze Dried
  • 1/4 c. THRIVE Chopped Onions - Freeze Dried
  • 1/2 c. THRIVE Green Bell Peppers - Freeze Dried
  • 1/4 c. THRIVE Mushroom Pieces - Freeze Dried
  • 2 tbsp. butter
  • 1 tsp THRIVE Chefs Choice
  • 1 c. THRIVE Shredded Cheddar Cheese - Freeze Dried(rehydrated)

Directions

  1. Mix scrambled egg powder and water together until well blended.
  2. In a small bowl, combine the ham dices with enough water to completely cover the ham and allow to sit 10 minutes.
  3. Add onions, peppers, and mushrooms with enough water to barely cover.
  4. Mix well and allow to sit to soften for another 2 minutes.
  5. To make each omelet, preheat a small omelet non stick pan, add in 1/2 tbsp. butter and 1/4 of the ham and vegetable mixture.
  6. Saute for a minute on high heat.
  7. Add in 1/4 of the egg mixture and allow the egg to set lightly without browning.
  8. With a rubber spatula, lift the set layer of egg up and tilt to allow uncooked egg to go underneath.
  9. Repeat the process until each omelet is cooked.
  10. Flip omelet over and remove from heat.
  11. Top omelets with cheese and fold onto plate.
