Ingredients
- 3 roma tomatoes, seeds removed, diced
- 2 avocadoes, diced
- 1/2 C Thrive Life Chopped Onions
- 1 1/2 C Thrive Life Sweet Corn
- 1/2 C Thrive Life Red Bell Peppers
- 1 Tbsp Thrive Life Green Chili Peppers
- 1 C Thrive Life Instant Black Beans, prepared, drained
- 1 15 oz can of black-eyed peas
- 1 Tbsp fresh cilantro, chopped
- Tortilla chips for serving
- 1/3 C olive or avocado oil
- 2 Tbsp fresh lime juice
- 2 Tbsp red wine vinegar
- 1 tsp white sugar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
Directions
- In a large bowl, combine onions, corn, bell pepper and green chilis.
- Add about 1 cup of water and mix to coat.
- Set aside for 10 minutes, stirring occasionally.
- In a separate bowl, whisk together oil, lime juice, vinegar, sugar, salt, pepper and garlic powder.
- Once the veggies are refreshed, add the prepared & drained black beans, black-eyed peas, tomatoes, avocado and cilantro. Stir to mix.
- Add the dressing and stir to coat.
- Serve immediately with tortilla chips or top your salad with it.
