Corn and Pea Medley

A fun veggie medley for any dinner.

Ingredients
- 1 C THRIVE Sweet Corn
- 1 C THRIVE Green Peas
- 1/2 C THRIVE Red Bell Peppers
- 1/2 C THRIVE Mushroom Pieces
- 1/4 C THRIVE Chopped Onions
- 1 1/2 C Water
- 3 Tbsp Butter
- 1 tsp Garlic, minced
- 1 tsp Basil
- 1 tsp Parsley
- 1/2 tsp THRIVE Chefs Choice
Directions
- In a medium-size bowl, combine vegetables and water and stir well to reconstitute.
- Allow to rest for 5–10 minutes. In a large sauté pan, melt butter and garlic together and sweat for a minute to get pan hot.
- Add vegetables with any remaining water from reconstitution.
- Sauté until vegetables are hot and most liquid is gone.
- Season vegetables with herbs and season salt and serve
