Coconut Panna Cotta

Ingredients

  • 1 tbsp. Powdered gelatin
  • 1 tsp. Powdered gelatin
  • 1 can Cream of coconut (Coco Lopez works best) 15 oz can
  • 1 can Coconut milk 13.05 can
  • 1 c. THRIVE Instant Milk
  • 1 c. Heavy cream
  • 1 tbsp. Pure Vanilla Powder - Spice Can
  • 4 tbsp. Water
  • 1/4 c. Powdered Sugar

Directions

  1. Mix 1 tbsp. + 1 tsp. gelatin with 4 tbsp. water in small container and set aside to bloom.
  2. In a saucepan, add the coconut milk, coconut cream, milk and heavy cream.
  3. Add in the bloomed gelatin and heat until gelatin is completely dissolved or just before it simmers. Stir in powdered sugar and vanilla until completely dissolved.
  4. Pour hot mixture into desired glass or dish and allow to completely cool and set in fridge. About 3-4 hours.
  5. After the panna cotta is set, top with macaroon, toasted coconut, whipped cream, tropical fruit salsa, or any other garnish you wish!
