Coconut Panna Cotta

Ingredients
- 1 tbsp. Powdered gelatin
- 1 tsp. Powdered gelatin
- 1 can Cream of coconut (Coco Lopez works best) 15 oz can
- 1 can Coconut milk 13.05 can
- 1 c. THRIVE Instant Milk
- 1 c. Heavy cream
- 1 tbsp. Pure Vanilla Powder - Spice Can
- 4 tbsp. Water
- 1/4 c. Powdered Sugar
Directions
- Mix 1 tbsp. + 1 tsp. gelatin with 4 tbsp. water in small container and set aside to bloom.
- In a saucepan, add the coconut milk, coconut cream, milk and heavy cream.
- Add in the bloomed gelatin and heat until gelatin is completely dissolved or just before it simmers. Stir in powdered sugar and vanilla until completely dissolved.
- Pour hot mixture into desired glass or dish and allow to completely cool and set in fridge. About 3-4 hours.
- After the panna cotta is set, top with macaroon, toasted coconut, whipped cream, tropical fruit salsa, or any other garnish you wish!
