Ingredients

  • 2 c. THRIVE Instant Refried Beans
  • 2 c. Water - may have to add a little more if needed - keep an additional cup handy
  • 2 tbsp. Oil - your choice
  • 1/2 c. THRIVE Onion Slices
  • 1 c. Cream Cheese
  • 1 c. THRIVE Sour Cream Powder
  • 2 c. Salsa - your Favourite kind
  • 1 c. THRIVE Sweet Corn
  • 1 c. THRIVE Tomato Dices
  • 1/2 c. THRIVE Green Chili Peppers
  • 1/2 c. THRIVE Green Bell Peppers
  • 1/3 c. THRIVE Green Onions
  • 2 c. THRIVE Shredded Cheddar Cheese
  • 3 c. Chopped lettuce
  • 3 tbsp. Cilantro

Directions

  1. in medium sized skillet, saute onion slices in oil over medium to high heat. Substitute chopped onions if you don't have sliced. Lightly toast.
  2. When onions are aromatic and just lightly golden (happens quick), add instant refried beans and stir to light toast.
  3. add water to toasting beans and stir to moisten all.
  4. Continue stirring over medium heat till beans are preferred consistency, adding more water if necessary. Turn beans off and set aside to cool.
  5. With hand mixer, beat softened cream cheese, slowly adding sour cream till nice and smooth. Set aside.
  6. Refresh shredded cheddar in plastic container with a lid, using small amount of water. Start with 1/4 cup. Put lid on and gently shake cheese to moisten. Let sit for 5-10 minutes then test. If the cheese isn't moist enough, add a little more water 1Tablespoons at a time. Reseal. Gently shake to moisten. Leave another few minutes and test again. Easier to add more water than remove water, so experiment. Set aside when refreshed.
  7. Spoon prepared refried beans in a layer to cover the bottom of your flat serving dish.
  8. Spoon cream cheese / sour cream mixture over top refried beans and smooth it out
  9. Spoon salsa over top sour cream mixture evenly.
  10. Sprinkle corn over top salsa
  11. Sprinkle tomatoes and chili peppers in a lyer over top salsa and corn
  12. Sprinkle red and green peppers in another layer
  13. Sprinkle green onions over top.
  14. Sprinkle refreshed shredded cheddar cheese over top vegies
  15. Top your layers with a generous portion of chopped lettuce. Cover with lid or plastic wrap and set aside at least 15 minutes before serving.
  16. Can be made several hours in advance and refrigerated.
  17. Sprinkle cilantro generously in any layer you prefer. Be very generous if you love cilantro. I sprinkle it over salsa.
  18. Serve with crackers or taco chips of your choice.
