Ingredients

Directions

  1. Add about ½ cup of water to the bowl of chicken and set aside to refresh.
  2. Heat avocado oil and butter in a large sauté pan over medium heat.
  3. Add onions, garlic, bell pepper, and corn. Toss and stir until just starting to caramelize, about 5 minutes.
  4. Add chili powder, cumin, bouillon and sour cream powder. Toss to coat.
  5. Add 2 cups water to deglaze.
  6. Add the rest of the water and bring to a boil.
  7. Remove a few cups of the soup and blend in the blender or with an immersion blender and when blended, pour back into the pot.
  8. Add chicken and let simmer for about 5 more minutes and then serve.
  9. Serve with your favorite garnishes.
