Chicken Tortilla Soup

Ingredients
- 1 Tbsp avocado oil
- 4 Tbsp butter
- 3/4 C Thrive Life Chopped Onions
- 1 tsp Thrive Life Garlic
- 1/2 C Thrive Life Red Bell Peppers
- 1/2 C Thrive Life Sweet Corn
- 1 C Thrive Life Chicken Slices
- 6 corn tortillas, cut into small pieces
- 2 tsp chili powder
- 1 Tbsp cumin
- 2 Tbsp +2 tsp Thrive Life Vegetarian Chicken Bouillon
- 1/4 C Thrive Life Sour Cream Powder
- 8 C water
- salt to taste
- 1/8 tsp hot sauce (optional)
- Corn tortilla strips, sour cream, diced avocado, lime slices for garnish
Directions
- Add about ½ cup of water to the bowl of chicken and set aside to refresh.
- Heat avocado oil and butter in a large sauté pan over medium heat.
- Add onions, garlic, bell pepper, and corn. Toss and stir until just starting to caramelize, about 5 minutes.
- Add chili powder, cumin, bouillon and sour cream powder. Toss to coat.
- Add 2 cups water to deglaze.
- Add the rest of the water and bring to a boil.
- Remove a few cups of the soup and blend in the blender or with an immersion blender and when blended, pour back into the pot.
- Add chicken and let simmer for about 5 more minutes and then serve.
- Serve with your favorite garnishes.
