  1. In a pot add coconut oil, garlic, ginger, and curry powder and cook for a few minutes on medium heat until the oil is infused with the spices.
  2. Add onion, diced tomatoes, chicken, and water. Cook for another few minutes until chicken is refreshed. (Add more water if needed.)
  3. Add coconut milk and sour cream or yogurt and simmer until incorporated, about 10-15 minutes.
  4. Top with the green onions and fresh cilantro before serving.
  5. Serve over rice, potatoes, or gnocchi noodles.
