Chef Todd's TVP Tacos

Ingredients
- 2 c. Taco TVP
- 2 tbsp. THRIVE Mixed Bell Peppers
- 3 1/2 c. water
- 2 tbsp. olive oil
- 1 tbsp. garlic, minced or THRIVE garlic
- 2 tbsp. soy sauce
- 1/4 c. salsa
- 1/4 c. THRIVE Shredded Colby Jack Cheese (reconstituted)
- 12 tortillas
Directions
- Place Taco TVP and peppers in a large bowl. Heat water to a boil and pour over mixture. Let rehydrate for 5 minutes. Drain by pressing through strainer.
- Add oil and garlic to a saucepan over medium heat and sauté lightly.
- Add TVP mixture and lightly brown. Add soy sauce and stir in.
- Mix in salsa and remove from heat.
- Fill tortillas with mixture and top with cheese and your choice of toppings.
