Ingredients

  • 2 c. Taco TVP
  • 2 tbsp. THRIVE Mixed Bell Peppers
  • 3 1/2 c. water
  • 2 tbsp. olive oil
  • 1 tbsp. garlic, minced or THRIVE garlic
  • 2 tbsp. soy sauce
  • 1/4 c. salsa
  • 1/4 c. THRIVE Shredded Colby Jack Cheese (reconstituted)
  • 12 tortillas

Directions

  1. Place Taco TVP and peppers in a large bowl. Heat water to a boil and pour over mixture. Let rehydrate for 5 minutes. Drain by pressing through strainer.
  2. Add oil and garlic to a saucepan over medium heat and sauté lightly.
  3. Add TVP mixture and lightly brown. Add soy sauce and stir in.
  4. Mix in salsa and remove from heat.
  5. Fill tortillas with mixture and top with cheese and your choice of toppings.
