Cheesy Sausage Scrambled Eggs OR Egg Muffins

Ingredients
- 1 C Thrive Life Scrambled Egg Mix (or 8 eggs)
- 2 C water to rehydrate eggs
- 1/2 C Thrive Life Sausage Crumbles
- 1 C Thrive Life Cheddar Cheese
- 1/4 C Thrive Life Chopped Onions
- 1 C Thrive Life Broccoli
- 1/2 C Thrive Life Spinach
- 1/2 C Thrive Life Red Bell Peppers
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp dried thyme
Directions
- Cover sausage crumbles with HOT water. Set aside until tender (up to 30 minutes).
- If making the egg muffins, preheat oven to 350 degrees and lightly grease a muffin tin.
- In a medium bowl, whisk egg powder with water.
- Add cheese, vegetables, and sausage once tender and stir to moisten all.
- Add in salt, pepper, and thyme.
- Spoon 1/4 C of mixture into each muffin cup.
- Cook in oven for 20-25 minutes.
- When muffins are done, leave them on a rack to cool to prevent the bottoms getting soggy.
- If making the breakfast scramble, instead of cooking eggs in oven, cook them in a prepared skillet. Makes a great omelet or filling for breakfast burritos too!
