Directions

  1. Cover sausage crumbles with HOT water. Set aside until tender (up to 30 minutes).
  2. If making the egg muffins, preheat oven to 350 degrees and lightly grease a muffin tin.
  3. In a medium bowl, whisk egg powder with water.
  4. Add cheese, vegetables, and sausage once tender and stir to moisten all.
  5. Add in salt, pepper, and thyme.
  6. Spoon 1/4 C of mixture into each muffin cup.
  7. Cook in oven for 20-25 minutes.
  8. When muffins are done, leave them on a rack to cool to prevent the bottoms getting soggy.
  9. If making the breakfast scramble, instead of cooking eggs in oven, cook them in a prepared skillet. Makes a great omelet or filling for breakfast burritos too!
