Cheesy Potatoes

Ingredients
- 2 C Thrive Life Potato Dices
- 3 C Thrive Life Cheddar Cheese
- 6 Tbsp Thrive Life Instant Milk
- 6 Tbsp butter
- 6 Tbsp flour
- 1/2 C Thrive Life Chopped Onions
- Thrive Life Chef's Choice Seasoning
Directions
- Rehydrate potato dices by putting them in a bowl with enough hot water that the potato dices start to float. Set aside.
- Refresh the cheese by putting it in a separate bowl with enough cold water that the cheese starts to float. Set in fridge.
- Mix 2 cups of cold water with the instant milk. Set in fridge.
- Make a roux by adding butter and flour to a saucepan on low heat, whisking constantly until combined.
- Add in potatoes, onions, milk, and 2 cups of the cheese. Let sauce thicken on low heat.
- Sprinkle in Chef's Choice Seasoning to taste.
- Transfer mixture to a 9 x 9 baking pan and top with the remaining cheese.
- Cook in oven at 375 degrees for 15 minutes.
