Brown Sugar Oat Muffins

Great muffins for breakfast or as an afternoon snack.

Ingredients
- 1 C Quick Oats
- 1 C Whole Wheat Flour
- 1/2 C White Flour (All Purpose Unbleached Flour)
- 2 tsp Baking Powder
- 1/2 tsp Iodized Salt
- 2 Raw, Whole Egg
- 3/4 C Brown Sugar, packed
- 3/4 C 2% Milk
- 1/4 C Vegetable Oil
- 1 tsp Vanilla Extract
Directions
- In a small bowl, combine oats, flours, baking powder and salt
- In another small bowl, beat eggs, brown sugar, milk, oil and vanilla
- Stir wet ingredients into dry ingredients just until moistened
- Fill greased or paper-lined muffin cups two-thirds full.
- Bake at 400 degrees for 15-17 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
