Ingredients

  • 1 C Quick Oats
  • 1 C Whole Wheat Flour
  • 1/2 C White Flour (All Purpose Unbleached Flour)
  • 2 tsp Baking Powder
  • 1/2 tsp Iodized Salt
  • 2 Raw, Whole Egg
  • 3/4 C Brown Sugar, packed
  • 3/4 C 2% Milk
  • 1/4 C Vegetable Oil
  • 1 tsp Vanilla Extract

Directions

  1. In a small bowl, combine oats, flours, baking powder and salt
  2. In another small bowl, beat eggs, brown sugar, milk, oil and vanilla
  3. Stir wet ingredients into dry ingredients just until moistened
  4. Fill greased or paper-lined muffin cups two-thirds full.
  5. Bake at 400 degrees for 15-17 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
