Blueberry Cashew Butter

Only five ingredients in this delicious creamy Blueberry Cashew Butter... you'll love it! I've also swapped blueberries for strawberries and it's equally delicious. Just takes 10 minutes, it's Gluten Free, Vegan, and no added sugar.

Ingredients
- 1 c. THRIVE Blueberries FD
- 2 c. Dry Roasted Cashews without Salt
- 3 tbsp. Coconut Oil
- 2 tsp. Vanilla Bean Powder
- 1/4 tsp. Pink Himalayan Salt
Directions
- You will need a powerful blender food processor.
- In blender, add 1 cup of cashews, 2 tbsp of coconut oil, the other cup of cashews and the remainder of the coconut oil. I find layering it like this helps blend the cashews a lot easier. Blend till creamy and smooth.
- Add in blueberries, vanilla powder and salt. Blend till smooth and looks all mixed.
- If at this point you would like the consistency to be a little looser, you can add in a little more coconut oil. Store in jar or container and refrigerate. I usually warm it up in the microwave for 10-15 seconds to be a bit more spreadable after sitting in the refrigerator.
