Ingredients
- 2 c. Thrive Sweet Corn
- 1/4 c. Thrive Green Onions
- 1 1/2 c. Thrive Tomato Dices
- 1/4 c. Cilantro
- 1 1/3 c. Water
- 2 Avocados, chopped
- 1 can Black Eyed Peas, drained
- Dressing
- 1 tbsp. Thrive Chefs Choice
- 1 tbsp. Thrive Italian Seasoning Blend
- 1/3 c. Distilled Vinegar
- 1/2 c. Vegetable Oil
Directions
- Reconstitute tomatoes, corn, cilantro, and green onions with 1 1/3 cup water.
- Add drained can of black eyed peas.
- Mix dressing ingredients and pour over salsa mix.
- Add chopped avocados right before serving.
