Ingredients

  • 2 c. Thrive Sweet Corn
  • 1/4 c. Thrive Green Onions
  • 1 1/2 c. Thrive Tomato Dices
  • 1/4 c. Cilantro
  • 1 1/3 c. Water
  • 2 Avocados, chopped
  • 1 can Black Eyed Peas, drained
  • Dressing
  • 1 tbsp. Thrive Chefs Choice
  • 1 tbsp. Thrive Italian Seasoning Blend
  • 1/3 c. Distilled Vinegar
  • 1/2 c. Vegetable Oil

Directions

  1. Reconstitute tomatoes, corn, cilantro, and green onions with 1 1/3 cup water.
  2. Add drained can of black eyed peas.
  3. Mix dressing ingredients and pour over salsa mix.
  4. Add chopped avocados right before serving.
