Ingredients

  • 2 Eggs or THRIVE Scrambled Egg Mix
  • 1/2 C Unsweetened, Applesauce or THRIVE Applesauce
  • 1/2 C Brown Sugar
  • 1 C Unsweetened Almond Milk
  • 1 tsp Cinnamon
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tsp Pure Vanilla
  • 2 C Quick Oats
  • 1 C THRIVE Fuji Apple Slices FD - broken into pieces

Directions

  1. Whisk the eggs, applesauce, brown sugar, and applesauce together in a medium-sized bowl until combined.
  2. Add the spices and oats to the egg mixture and whisk until combined.
  3. Break the fuji apples into chunks and stir into the mixture until combined.
  4. Fill parchment-lined muffin cups 2/3 full, and bake for 15-20 minutes until set and cooked through.
  5. Store leftovers in a an airtight container in the fridge, or freeze any extras in a freezer-safe Ziploc bag.
  6. To reheat, simply pop in the microwave for 10-20 seconds until heated through.
  7. Enjoy cold, or give them a quick zap in the microwave, and be on your way.
