AIP Paleo Meat Stuffed Acorn Squash

This meat, apple and spice blend is delicious in acorn squash and would be great on pasta or bread too. Your family might enjoy cheese melted on top. This leaves a fragrant smell in the house that reminds me of fall. -by Anne Dann

Ingredients
- 2 Winter Acorn Squash
- 2 tsp Garlic, Raw
- 4 tbsp Bacon Grease or butter
- 1 c THRIVE Sausage Crumbles - Freeze Dried
- 1 c THRIVE Ground Beef (Hamburger) - Freeze Dried
- 3/4 c THRIVE Chopped Onions - Freeze Dried
- 3/4 c THRIVE Granny Smith Apple Slices - Freeze Dried broken into pieces
- 2 tsp Dried Thyme
- 2 tsp Black Pepper
- 1 tsp sea salt
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Nutmeg
Directions
- Preheat oven to 400F
- Cut the squash in half with the groove of the vegetable and discard the seeds. Line a 9X13 pan with aluminum foil and set the squash halves open side up. Put one tablespoon of butter in each squash and bake for 45 minutes.
- While the squash bakes, heat bacon grease and cook the garlic slightly. Add all the dry ingredients and stir. Add approximately 1.5 cups of water, just enough to refresh the food and add the spices as you heat the stuffing. Spoon equal amounts of the stuffing into each squash half and bake for approximately 15 minutes or until done. Enjoy!
