Directions:

  1. Prepare the topping ingredients by cooking the eggs and cooling in ice water, cook the bacon and drain the grease, slice the avocado. Set these items to the side for the toppings assembly.
  2. Cook the quinoa by adding to boiling water for 3-4 minutes, Add kale to the quinoa the last 20 seconds of cooking, pour quinoa and kale into fine mesh strainer and cool under cold water. Place in medium size bowl.
  3. Make the tomato salsa by adding all the ingredients to a container with a lid and tumble to refresh. Allow to rest for a few minutes in the refrigerator.
  4. Make the corn salsa by adding all the ingredients to a container with a lid and tumble to refresh. Allow to rest for a few minutes in the refrigerator.
  5. To prepare the dressing, add all ingredients to a blender except the oil and blend for 1 minute, add oil in slowly while blending to create an emulsion.
  6. Mix desired amount of dressing with the kale and quinoa and stir well to incorporate.
  7. Place 1/4 of the quinoa mixture in 4 bowls and divide all other toppings into four and top the quinoa with each topping. (you may wish to assemble 1 larger salad for a buffet style)
  8. Serve it up!
